Cilantro is at its very best in the cool months, and this is one of my favorite ways to use a big handful of it — chopped fresh and stirred through warm rice so its bright, citrusy fragrance blooms in the steam. There is something I love about a dish that lets a humble herb take center stage, that trusts the simple green thing to carry the flavor. The garden is full of these small, generous gifts. We do not always need much to eat well — often just a handful of something fresh, given at the right moment.
Instructions 👩🍳
- In a medium saucepan, bring the water or broth to a boil. Add the rice, reduce the heat to low, cover, and simmer 18-20 minutes, until the rice is tender and the liquid is absorbed.
- In a small skillet, melt the butter or heat the olive oil over medium heat. Add the garlic and sauté 1-2 minutes until fragrant, being careful not to burn it.
- Fluff the cooked rice with a fork and gently stir in the sautéed garlic, cilantro, lime juice, and salt. Mix well.
- Transfer to a serving dish and enjoy alongside your favorite mains.
