Cuisine Mexican
- 1 cup long-grain white rice
- 2 cups water or chicken broth
- 2 Tbsp butter or olive oil
- 4 cloves garlic, minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt, to taste
In a medium saucepan, bring the water or broth to a boil. Add the rice, reduce the heat to low, cover, and simmer 18-20 minutes, until the rice is tender and the liquid is absorbed.
In a small skillet, melt the butter or heat the olive oil over medium heat. Add the garlic and sauté 1-2 minutes until fragrant, being careful not to burn it.
Fluff the cooked rice with a fork and gently stir in the sautéed garlic, cilantro, lime juice, and salt. Mix well.
Transfer to a serving dish and enjoy alongside your favorite mains.
