Ingredients
- 1 pound Italian sausage, casings removed
- 4 cups chopped kale, stems removed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (14 ounces) crushed tomatoes
- 1 cup chicken or vegetable broth
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
- Parmesan cheese for serving
- Pasta of choice (spaghetti, penne, etc.)
Instructions
- Cook the Pasta: In a large pot, boil water and cook the pasta according to package instructions until al dente. Drain and set aside.
- Sauté Sausage: In a large skillet, heat olive oil over medium heat. Add the sausage, breaking it apart with a spatula, and cook until browned and cooked through (about 5-7 minutes).
- Add Aromatics: Stir in the diced onion and minced garlic. Sauté until the onion is translucent (about 3-4 minutes).
- Incorporate Kale: Add the chopped kale to the skillet and cook until wilted (about 2-3 minutes).
- Make the Ragu: Pour in the crushed tomatoes and broth. Add oregano, salt, and pepper. Stir to combine and let simmer for 10-15 minutes, allowing the flavors to meld.
- Combine: Toss the cooked pasta with the ragu until well coated. Serve hot, topped with grated Parmesan cheese.
