Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 cup all-purpose flour (plus more for dusting)
- 1 egg
- 1 teaspoon salt
- 1 bunch of kale, chopped
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- Cook Sweet Potatoes: Boil the sweet potatoes in salted water until tender, about 15 minutes. Drain and let cool slightly.
- Make Gnocchi Dough: In a large bowl, mash the sweet potatoes until smooth. Mix in the flour, egg, and salt until a dough forms. If the dough is too sticky, add more flour as needed.
- Shape Gnocchi: Divide the dough into sections and roll each section into a long rope about 1/2 inch thick. Cut into bite-sized pieces, and use a fork to create ridges on each piece for better sauce adherence.
- Cook Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi in batches and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
- Sauté Kale: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add chopped kale and cook until wilted, about 5 minutes.
- Combine: Add the cooked gnocchi to the skillet with the kale, tossing gently to combine. Season with salt and pepper to taste.
- Serve: Plate the gnocchi and sprinkle with grated Parmesan cheese if desired. Enjoy hot!
