Ingredients
- 2 pounds russet potatoes, peeled and cubed
- 1 head of garlic
- 1/2 cup unsalted butter
- 1/2 cup heavy cream or milk
- Salt to taste
- Freshly ground black pepper to taste
- Chives or parsley for garnish (optional)
Instructions
- Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast in the oven for about 30-40 minutes or until soft and caramelized.
- Cook the Potatoes: In a large pot, add the cubed potatoes and cover with cold water. Add a pinch of salt, bring to a boil, and cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
- Mash the Potatoes: Squeeze the roasted garlic cloves out of their skins into the potatoes. Add the butter and cream. Mash the mixture until smooth and creamy. For extra creaminess, you can use a hand mixer.
- Season: Taste and season with salt and freshly ground black pepper to your liking.
- Serve: Transfer the mashed potatoes to a serving bowl, garnish with chopped chives or parsley if desired, and serve warm.
