Ingredients
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 lb Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon red chili flakes (adjust to taste)
- 1/4 cup lemon juice
- 1 tablespoon honey or maple syrup
- 1/4 cup chopped fresh parsley for garnish
Instructions
- Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until quinoa is fluffy. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
- Roast the Brussels Sprouts: Preheat the oven to 400°F (200°C). On a baking sheet, toss the halved Brussels sprouts with olive oil, salt, and pepper. Roast in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy.
- Prepare the Dressing: In a small bowl, whisk together the lemon juice, honey or maple syrup, and red chili flakes until well combined.
- Combine Salad: In a large bowl, combine the cooked quinoa, roasted Brussels sprouts, and dressing. Toss well to coat everything evenly.
- Garnish: Serve the salad warm or at room temperature, garnished with fresh parsley.
