- 4 cups kale, stems removed and leaves chopped
- 2 medium beets, peeled and diced
- 1/2 cup crumbled feta cheese
- 1/4 cup walnuts, toasted
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey or maple syrup
- Salt and pepper to taste
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Roast the Beets: Spread diced beets on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes, or until tender.
