Ingredients
- 1 cup rolled oats
- 1/2 cup unsweetened shredded coconut
- 1 cup pitted dates
- 2 tablespoons honey or maple syrup
- Zest of 1 lime
- Juice of 1 lime
- 1/4 cup chopped nuts (optional)
- Pinch of salt
Instructions
- Combine Ingredients: In a food processor, combine the rolled oats, shredded coconut, pitted dates, honey (or maple syrup), lime zest, lime juice, and a pinch of salt. Process until the mixture is well combined and sticky.
- Add Nuts: If using, add the chopped nuts and pulse a few times just to incorporate them into the mixture.
- Form Bites: Using your hands, take small portions of the mixture and roll them into bite-sized balls. Place the rolled bites on a parchment-lined tray.
