Mediterranean Roasted Rutabaga with Feta

A Unique and Flavorful Rutabaga Bake

The Mediterranean Rutabaga and Feta Bake is a warm, comforting dish with a rich, savory taste. The sweetness of the rutabaga pairs beautifully with the salty feta and fragrant herbs, making it a standout addition to any meal.
Ingredients
- 2 medium rutabagas, peeled and sliced
- 1 cup crumbled feta cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the sliced rutabaga with olive oil, minced garlic, oregano, thyme, salt, and pepper until evenly coated.
- Layer half of the rutabaga slices in a greased baking dish. Sprinkle half of the feta cheese on top.
- Add the remaining rutabaga slices and finish with the rest of the feta cheese.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the rutabaga is tender and golden on top.
- Garnish with fresh parsley before serving.
