This warm lentil and spinach salad features tender lentils, fresh spinach, and a zesty dressing that brings everything together. The earthy flavor of the lentils pairs beautifully with the vibrant spinach, creating a dish that is both hearty and refreshing.
Ingredients
- 1 cup green or brown lentils, rinsed
- 2 cups vegetable broth or water
- 4 cups fresh spinach, washed and chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1/4 cup feta cheese, crumbled (optional)
- Chopped walnuts or pecans for garnish (optional)
Instructions
- Cook the Lentils: In a pot, combine lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, until tender. Drain any excess liquid.
- Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute.
- Combine Ingredients: Add the cooked lentils to the skillet with the onions and garlic. Stir in chopped spinach and cook until wilted, about 2-3 minutes.
- Make the Dressing: In a small bowl, whisk together balsamic vinegar, Dijon mustard, salt, and pepper. Pour over the lentil mixture and toss to combine.
- Serve: Remove from heat, sprinkle with crumbled feta cheese and chopped nuts if desired. Serve warm, either on its own or as a side dish.
