Ingredients
- 4 chicken thighs, bone-in and skin-on
- 2 tablespoons olive oil
- 2 lemons (zested and juiced)
- 3 cloves garlic, minced
- 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
- Salt and pepper to taste
- Fresh thyme sprigs for garnish (optional)
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C).
- Prepare the Marinade: In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, thyme, salt, and pepper.
- Marinate the Chicken: Place chicken thighs in a baking dish and pour the marinade over them. Ensure each piece is well-coated. Let it marinate for at least 30 minutes, or up to overnight in the refrigerator for deeper flavor.
- Roast the Chicken: Arrange the marinated chicken thighs skin-side up in the baking dish. Roast in the preheated oven for 30-35 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C).
- Serve: Remove from the oven and let rest for a few minutes. Garnish with fresh thyme sprigs if desired and serve with your favorite sides.
