Ingredients
- 1 head of garlic
- 2 tablespoons olive oil
- 8 ounces goat cheese, softened
- 1/4 cup cream cheese, softened
- 1/4 cup sour cream
- 1 tablespoon fresh thyme leaves, chopped
- Salt and black pepper to taste
- Fresh vegetables, crackers, or bread for serving
Instructions
- Caramelize the Garlic: Preheat the oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves. Drizzle with olive oil and wrap in aluminum foil. Roast in the oven for about 30-35 minutes, or until the cloves are soft and caramelized.
- Blend the Dip: Once the garlic has cooled, squeeze the cloves out of their skins into a mixing bowl. Add the goat cheese, cream cheese, sour cream, and thyme. Use a fork or hand mixer to blend until smooth and creamy.
