This sorrel tart features a buttery, flaky crust filled with a mixture of fresh sorrel, creamy goat cheese, and eggs. The result is a delightfully tangy and savory dish that is both light and satisfying.
Ingredients
- 1 pre-made pie crust or homemade tart crust
- 4 cups fresh sorrel, stems removed and roughly chopped
- 1 cup goat cheese, crumbled
- 3 large eggs
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh thyme (optional)
- 1 tablespoon olive oil for sautéing sorrel
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Crust: If using a homemade crust, roll it out and fit it into a tart pan. Prick the bottom with a fork and bake for 10 minutes until slightly golden. Let it cool.
- Sauté the Sorrel: In a skillet, heat the olive oil over medium heat. Add the chopped sorrel and sauté for about 2-3 minutes until wilted. Remove from heat and let cool slightly.
- Make the Filling: In a mixing bowl, whisk together the eggs, heavy cream, salt, pepper, and thyme (if using). Stir in the sautéed sorrel and crumbled goat cheese.
- Assemble the Tart: Pour the filling mixture into the pre-baked tart crust and spread it evenly.
- Bake: Bake the tart in the preheated oven for 30-35 minutes or until the filling is set and slightly golden on top.
- Cool and Serve: Allow the tart to cool for a few minutes before slicing. Serve warm or at room temperature.
