The quinoa provides a hearty base that’s rich in protein, while the sorrel adds a unique sour note that enhances the overall flavor profile. This dish is both satisfying and refreshing, ideal for anyone looking to enjoy a wholesome meal.
Ingredients
- 4 large bell peppers (any color)
- 1 cup quinoa, rinsed
- 2 cups vegetable broth or water
- 2 cups fresh sorrel, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup feta cheese, crumbled (optional)
- Fresh herbs for garnish (optional)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Quinoa: In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and liquid is absorbed.
- Sauté Vegetables: In a skillet, heat olive oil over medium heat. Add diced onion and garlic, sauté until translucent. Stir in chopped sorrel, oregano, salt, and pepper. Cook until sorrel is wilted.
- Combine Filling: In a large bowl, mix the cooked quinoa with the sautéed vegetable mixture. If using, add feta cheese and stir to combine.
- Stuff the Peppers: Cut the tops off the bell peppers and remove the seeds. Fill each pepper generously with the quinoa-sorrel mixture.
- Bake: Place the stuffed peppers upright in a baking dish. Add a splash of water to the bottom of the dish, cover with foil, and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are tender.
- Serve: Garnish with fresh herbs if desired. Enjoy warm!
