Ingredients
  

  • 1 sheet of puff pastry, thawed
  • 2 medium beets, roasted and sliced
  • 1 cup goat cheese, crumbled
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions
 

  • Preheat the Oven: Preheat your oven to 400°F (200°C).
  • Prepare the Puff Pastry: Roll out the puff pastry on a lightly floured surface and fit it into a tart pan. Trim any excess edges and prick the bottom with a fork.
  • Layer the Ingredients: Arrange the roasted beet slices evenly over the pastry. Sprinkle the crumbled goat cheese on top and then scatter the fresh herbs over everything.
  • Season: Drizzle with olive oil and season with salt and pepper to taste.
  • Brush with Egg Wash: Brush the edges of the pastry with the beaten egg for a golden finish.
  • Bake: Bake the tart in the preheated oven for 25-30 minutes, or until the pastry is golden and puffed.
  • Serve: Allow to cool slightly before slicing. Serve warm or at room temperature, garnished with additional fresh herbs if desired.
