- 2 medium beets, roasted and sliced
- 1 cup goat cheese, crumbled
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh chives, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Preheat the Oven: Preheat your oven to 400°F (200°C).
Prepare the Puff Pastry: Roll out the puff pastry on a lightly floured surface and fit it into a tart pan. Trim any excess edges and prick the bottom with a fork.
Layer the Ingredients: Arrange the roasted beet slices evenly over the pastry. Sprinkle the crumbled goat cheese on top and then scatter the fresh herbs over everything.
Season: Drizzle with olive oil and season with salt and pepper to taste.
Brush with Egg Wash: Brush the edges of the pastry with the beaten egg for a golden finish.
