- 1 head romaine lettuce, chopped
- 1 cup shredded carrots
- 1 red bell pepper, diced
- 1 cup green onions, sliced
- 1/2 cup chopped cilantro
- 1/4 cup sesame seeds, toasted
- 1/4 cup slivered almonds
- 1/3 cup sesame oil
- 1/4 cup soy sauce
- 2 Tbsp rice vinegar
- 1 Tbsp honey or maple syrup
- 1 tsp minced garlic
- Salt and pepper, to taste
In a large mixing bowl, combine the chopped romaine, shredded carrots, diced bell pepper, sliced green onions, and chopped cilantro.
In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey (or maple syrup), garlic, salt, and pepper until well combined.
Pour the dressing over the salad and toss gently to coat the vegetables evenly.
Sprinkle the toasted sesame seeds and slivered almonds over the top for crunch.
