  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 8 ounces fresh mushrooms sliced
  • 10 ounces fresh spinach washed and trimmed
  • Salt and pepper to taste
  • 1 teaspoon lemon juice optional

Instructions
 

  • Heat the Oil: In a large skillet, heat the olive oil over medium heat.
  • Sauté the Garlic: Add the minced garlic and sauté for about 30 seconds, until fragrant but not browned.
  • Cook the Mushrooms: Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are tender and have released their moisture.
  • Add the Spinach: Stir in the fresh spinach and cook for another 2-3 minutes, until wilted. Season with salt, pepper, and lemon juice if desired.
