Refreshing Mint Tea with Ginger and Citrus

A bright, zingy herbal tea steeped from garden mint, fresh ginger, and citrus - lovely hot or over ice, and naturally caffeine-free.

Servings 4 cups

Ingredients
  

  • 4 cups water
  • 1 packed cup fresh mint leaves washed
  • 5 slices fresh ginger
  • 2 lemon or orange slices
  • 2 teaspoons honey or maple syrup optional

Instructions
 

  • Bring the water to a boil in a small saucepan, then remove from the heat.
  • Add the mint, ginger, and citrus slices. Cover and steep for 10 minutes.
  • Strain into a teapot or pitcher and stir in honey or maple syrup, if using, while still warm.
  • Serve warm in teacups, or refrigerate and pour over ice with an extra sprig of mint.

Notes

Swaps: Add lemon balm or Thai basil, or steep with a little green tea for gentle caffeine. Sweeten with honey, maple, or agave, or skip it entirely. Storage: keeps up to 4 days in a sealed jar or pitcher. Steep and strain ahead, then chill. Freeze any extra in ice cube trays for herbal iced-tea cubes that won't water down your glass.
