Fresh Winter Citrus Chopped Salad
Jewel-bright segments of orange and grapefruit tumbled over fresh greens with crunchy nuts, sharp red onion, and a honey-cider dressing. A burst of color and sunshine for the greyest month.

- 2 cups mixed salad greens spinach, arugula, or spring mix
- 1 large orange, peeled and segmented
- 1 large grapefruit, peeled and segmented
- 1/2 small red onion, thinly sliced
- 1/4 cup walnuts or almonds, chopped
- 1/4 cup feta cheese, crumbled optional
- 1/4 cup olive oil
- 2 Tbsp apple cider vinegar
- 1 tsp honey or maple syrup
- Salt and pepper, to taste
Peel and segment the orange and grapefruit, removing any seeds. Set aside.
In a large bowl, add the mixed greens and sliced red onion.
Gently toss in the citrus segments and chopped nuts.
In a small bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), salt, and pepper until well combined.
Drizzle the dressing over the salad and toss gently to coat.
Transfer to a serving platter and sprinkle with crumbled feta, if using.
