Fresh Winter Citrus Chopped Salad

Jewel-bright segments of orange and grapefruit tumbled over fresh greens with crunchy nuts, sharp red onion, and a honey-cider dressing. A burst of color and sunshine for the greyest month.

Ingredients
  

  • 2 cups mixed salad greens spinach, arugula, or spring mix
  • 1 large orange, peeled and segmented
  • 1 large grapefruit, peeled and segmented
  • 1/2 small red onion, thinly sliced
  • 1/4 cup walnuts or almonds, chopped
  • 1/4 cup feta cheese, crumbled optional
  • 1/4 cup olive oil
  • 2 Tbsp apple cider vinegar
  • 1 tsp honey or maple syrup
  • Salt and pepper, to taste

Instructions
 

  • Peel and segment the orange and grapefruit, removing any seeds. Set aside.
  • In a large bowl, add the mixed greens and sliced red onion.
  • Gently toss in the citrus segments and chopped nuts.
  • In a small bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), salt, and pepper until well combined.
  • Drizzle the dressing over the salad and toss gently to coat.
  • Transfer to a serving platter and sprinkle with crumbled feta, if using.
