Ingredients
  

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup plain Greek yogurt
  • 1/4 cup honey or maple syrup (adjust based on sweetness preference)
  • 1 teaspoon lemon juice
  • Assorted fresh berries (strawberries, blueberries, raspberries, etc.)
  • Mint leaves for garnish (optional)

Instructions
 

  • Make the Tart Shell: In a mixing bowl, combine flour and powdered sugar. Cut in softened butter until the mixture resembles coarse crumbs. Add egg yolk and vanilla extract, mixing until the dough comes together. Press the mixture into tartlet pans and chill for 30 minutes.
  • Pre-bake the Tart Shells: Preheat the oven to 350°F (175°C). Bake the tart shells for 12-15 minutes until lightly golden. Let cool completely.
  • Prepare the Filling: In a bowl, mix Greek yogurt, honey or maple syrup, and lemon juice until smooth.
  • Assemble the Tartlets: Spoon the yogurt mixture into the cooled tart shells and top with assorted fresh berries. Garnish with mint leaves if desired.
  • Serve: Chill the tartlets in the refrigerator for at least 30 minutes before serving. Enjoy these delightful treats fresh!
