Chicken in Creamy Mushroom Sauce

- 4 boneless, skinless chicken breasts
- 8 ounces mushrooms, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped parsley for garnish
Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.
Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.
Cook the Mushrooms: In the same skillet, add sliced mushrooms and sauté until they are browned and tender, about 5 minutes. Add minced garlic and cook for an additional minute until fragrant.
Create the Sauce: Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and thyme. Allow the sauce to cook for a few minutes until it thickens slightly.
Combine: Return the cooked chicken to the skillet, spooning the sauce over the top. Heat through for a couple of minutes.
Serve: Garnish with chopped parsley and serve over pasta, rice, or mashed potatoes.
