Cheesy Rutabaga Gratin with Thyme

- 2 large rutabagas, peeled and thinly sliced
- 1 cup heavy cream
- 1 cup milk
- 1 cup shredded Gruyère cheese
- 1 cup shredded cheddar cheese
- 2 Tbsp fresh thyme leaves, chopped
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 2 Tbsp butter, for greasing the dish
- 1/2 cup breadcrumbs optional, for topping
Preheat the oven to 375F (190C) and grease a baking dish with the butter.
In a mixing bowl, combine the heavy cream, milk, garlic, thyme, salt, and pepper; mix well.
Layer half of the sliced rutabaga in the dish. Pour over half of the cream mixture, then sprinkle with half of the Gruyère and cheddar.
Repeat the layering with the remaining rutabaga, cream mixture, and cheese. If using, sprinkle breadcrumbs over the top.
Cover the dish with foil and bake 45 minutes. Remove the foil and bake 15-20 minutes more, until golden, bubbling, and the rutabaga is tender.
Let rest 5-10 minutes before serving, so the layers can set.
