Ingredients
  

  • 1.5 pounds pork tenderloin
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 1/4 cup lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme or rosemary (optional)

Instructions
 

  • Prepare the Marinade: In a bowl, whisk together orange juice, lime juice, lemon juice, minced garlic, olive oil, honey, salt, pepper, and herbs if using.
  • Marinate the Pork: Place the pork tenderloin in a resealable bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
  • Preheat the Grill or Oven: Preheat your grill to medium-high heat or your oven to 400°F (200°C).
  • Cook the Pork: Remove the pork from the marinade, letting excess drip off. Grill for about 20-25 minutes, turning occasionally, or roast in the oven for 25-30 minutes until the internal temperature reaches 145°F (63°C).
  • Rest and Slice: Remove the pork from heat and let it rest for 5-10 minutes before slicing. This helps retain the juices.
  • Serve: Slice the pork tenderloin and serve with your choice of sides. Drizzle some of the leftover marinade (cooked) over the top for extra flavor.
