Winter Greens & Citrus Salad with Honey-Lemon Dressing

Ingredients
  

For the Salad

  • 4 cups mixed winter greens — kale, arugula, or spinach 120 g
  • 2 oranges, peeled and sliced into rounds
  • 1 small grapefruit, segmented
  • ½ small red onion, thinly sliced
  • ¼ cup toasted almonds or pecans 30 g
  • ¼ cup crumbled feta cheese 30 g; optional
  • Fresh rosemary or mint leaves for garnish

For the Honey-Lemon Dressing

  • 3 tbsp olive oil 45 mL
  • 1 tbsp fresh lemon juice 15 mL
  • 1 tbsp honey 15 mL
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

Instructions
 

Prepare

  • Wash and dry greens thoroughly, then tear into bite-sized pieces.
  • Arrange on a large platter or shallow bowl.
  • Layer orange and grapefruit slices over the greens.
  • Add red onion, nuts, and feta (if using).

Dress

  • In a small bowl or jar, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until emulsified.
  • Drizzle over salad just before serving.

Finish

  • Garnish with rosemary or mint leaves.
  • Serve immediately while the citrus is still glistening and bright.
