Traditional Moroccan Harira Soup Recipe

Ingredients
  

  • 1 lb lamb or beef, diced 450 g
  • 1 cup dried chickpeas, soaked overnight about 240 g soaked
  • 1/2 cup dried lentils, rinsed 100 g
  • 1 large onion, finely chopped
  • 2 medium tomatoes, chopped
  • 2 celery stalks, chopped
  • 6 cups water or beef broth 1.4 L
  • 2 Tbsp olive oil
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp ground turmeric
  • Salt and black pepper, to taste
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon

Instructions
 

  • Drain soaked chickpeas and set aside.
  • Chop vegetables and herbs before starting.
  • Heat olive oil in a large pot over medium heat.
  • Add diced meat and brown on all sides.
  • Stir in onion and celery; cook until softened, about 5 minutes.
  • Add tomatoes and cook until they begin to break down.
  • Stir in chickpeas, lentils, cumin, cinnamon, turmeric, salt, and pepper.
  • Pour in water or broth and bring to a gentle boil.
  • Reduce heat, cover, and simmer for about 90 minutes, until chickpeas are tender and soup is rich.
  • Stir in cilantro, parsley, and lemon juice.
  • Simmer uncovered for 10 more minutes.
  • Taste and adjust seasoning as needed.
