Ingredients
  

  • 🔹 2 cups sliced cucumbers (Persian or English cucumbers work best!)
  • 🔹 1 cup white vinegar (or rice vinegar for a milder taste!)
  • 🔹 1/2 cup water
  • 🔹 2 tablespoons honey (or maple syrup for a vegan option!)
  • 🔹 1 teaspoon salt
  • 🔹 1/2 teaspoon crushed red pepper flakes (adjust for heat level!)
  • 🔹 1/2 teaspoon mustard seeds (adds a subtle bite!)
  • 🔹 1/2 teaspoon black peppercorns
  • 🔹 2 cloves garlic, sliced
  • 🔹 Optional: 1 small sliced jalapeño for extra heat
  • 🌿 Want extra flavor? Add fresh dill or a bay leaf!

Instructions
 

  • ✔️ Wash and slice cucumbers into thin rounds or spears, depending on your preference.✔️ Pack them tightly into a clean, heatproof jar.
  • ✔️ In a small saucepan, combine vinegar, water, honey, salt, red pepper flakes, mustard seeds, black peppercorns, and garlic.✔️ Heat over medium until the mixture is just about to boil and the honey is fully dissolved.
  • ✔️ Carefully pour the hot brine over the cucumbers, making sure they’re fully submerged.✔️ Let sit at room temperature for 30 minutes before refrigerating.
  • ✔️ Enjoy after 30 minutes for a quick pickle or let them sit overnight for maximum flavor! 🍽️ Use these pickles to brighten up sandwiches, tacos, burgers, grain bowls, or charcuterie boards!
