- 3 medium summer squash or zucchini
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1/2 cup feta cheese, crumbled
- 2 tablespoons fresh mint, chopped
- Salt and pepper to taste
Trim the squash and shave into long, thin ribbons with a peeler or mandoline. Place in a bowl.
