Rustic Apple-Sage Pork Chops

Ingredients
  

  • 4 bone-in pork chops about 1½ lb / 680 g total
  • 1 tbsp olive oil 15 mL
  • 1 tbsp butter 15 g
  • 1 large apple, thinly sliced Honeycrisp or Fuji recommended
  • 1 small onion, thinly sliced
  • 2 tbsp apple cider or white wine 30 mL
  • 2 tbsp honey or maple syrup 30 mL
  • 6 fresh sage leaves, chopped
  • Salt and pepper to taste
  • Optional: ½ tsp Dijon mustard for a hint of sharpness

Instructions
 

Prepare

  • Pat pork chops dry and season both sides with salt and pepper.
  • Warm olive oil and butter in a cast iron skillet over medium heat.

Sear

  • Add chops and cook 3–4 minutes per side, until golden.
  • Remove to a plate; cover to keep warm.

Sauté

  • In the same pan, add sliced onion and apple.
  • Cook 5 minutes, stirring often, until soft and lightly caramelized.
  • Stir in honey (or maple syrup), apple cider, sage, and mustard if using.

Finish

  • Return pork chops to skillet, nestling into the apples.
  • Simmer 5–7 minutes, until cooked through and glazed.
  • Taste and adjust seasoning — a pinch of salt often brightens everything.
