Instructions
Prepare
Pat pork chops dry and season both sides with salt and pepper.
Warm olive oil and butter in a cast iron skillet over medium heat.
Sear
Add chops and cook 3–4 minutes per side, until golden.
Remove to a plate; cover to keep warm.
Sauté
In the same pan, add sliced onion and apple.
Cook 5 minutes, stirring often, until soft and lightly caramelized.
Stir in honey (or maple syrup), apple cider, sage, and mustard if using.
Finish
Return pork chops to skillet, nestling into the apples.
Simmer 5–7 minutes, until cooked through and glazed.
Taste and adjust seasoning — a pinch of salt often brightens everything.
