Mediterranean Garlic Herb Rice (Easy & Flavorful!)

Ingredients
  

  • 🔹 1 cup long-grain rice (such as jasmine or basmati)
  • 🔹 2 cups vegetable or chicken broth (for richer flavor, use homemade broth!)
  • 🔹 2 tablespoons extra virgin olive oil
  • 🔹 4 cloves garlic, minced
  • 🔹 1/4 cup fresh parsley, chopped
  • 🔹 1 tablespoon fresh thyme, chopped
  • 🔹 1/2 teaspoon lemon zest (optional, for a fresh citrus kick!)
  • 🔹 Salt & pepper to taste
  • 🍋 For extra Mediterranean flavor, add a squeeze of fresh lemon juice before serving!

Instructions
 

  • ✔️ Rinse the rice under cold water until the water runs clear. (This removes excess starch and prevents mushy rice!)
  • ✔️ In a medium saucepan, heat olive oil over medium heat.✔️ Add minced garlic and sauté for about 1 minute until fragrant.
  • ✔️ Stir in the rinsed rice, coating it with the garlicky oil.✔️ Cook for 2-3 minutes, stirring occasionally, until slightly toasted.
  • ✔️ Pour in broth and season with salt & pepper.✔️ Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes.
  • ✔️ Remove from heat and let sit (covered) for 5 minutes.✔️ Fluff with a fork and stir in chopped parsley, thyme, and lemon zest.✔️ Taste and adjust seasoning if needed. 🍽️ Serve warm with grilled lamb, chicken souvlaki, or roasted eggplant!
