Instructions
Prepare
Preheat oven to 425°F (220°C) .
Generously butter a muffin or popover pan and place it in the oven to heat.
In a bowl, whisk together flour and salt.
In another bowl, whisk milk, eggs, and melted butter until smooth.
Combine
Pour wet ingredients into dry and whisk until just combined (a few lumps are fine).
Stir in chopped herbs and cheese, if using.
Let batter rest for 10 minutes to relax the gluten.
Bake
Carefully remove the hot pan from the oven.
Divide batter evenly between cups — each about halfway full.
Bake 15 minutes at 425°F, then reduce to 350°F (175°C) and bake 15 minutes more , until golden and puffed.
Finish
Do not open the oven door early — they’ll deflate!
Serve immediately with butter, jam, or drizzled honey.
