Garden Herb Popovers

Ingredients
  

  • 1 cup all-purpose flour 125 g
  • 1 cup whole milk, room temperature 240 mL
  • 2 large eggs, room temperature
  • 1 tbsp melted butter, plus more for greasing pan 15 g
  • 1 tbsp finely chopped fresh herbs 3–4 g; rosemary, thyme, or chives
  • ¼ tsp salt
  • Optional: ¼ cup grated Parmesan or cheddar for a savory twist 25 g

Instructions
 

Prepare

  • Preheat oven to 425°F (220°C) .
  • Generously butter a muffin or popover pan and place it in the oven to heat.
  • In a bowl, whisk together flour and salt.
  • In another bowl, whisk milk, eggs, and melted butter until smooth.

Combine

  • Pour wet ingredients into dry and whisk until just combined (a few lumps are fine).
  • Stir in chopped herbs and cheese, if using.
  • Let batter rest for 10 minutes to relax the gluten.

Bake

  • Carefully remove the hot pan from the oven.
  • Divide batter evenly between cups — each about halfway full.
  • Bake 15 minutes at 425°F, then reduce to 350°F (175°C) and bake 15 minutes more , until golden and puffed.

Finish

  • Do not open the oven door early — they’ll deflate!
  • Serve immediately with butter, jam, or drizzled honey.
