Ingredients
  

  • 4 medium zucchinis, spiralized into noodles
  • 1 cup cherry tomatoes, halved
  • 1/2 cup basil pesto (store-bought or homemade)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)
  • Parmesan cheese for serving (optional)

Instructions
 

  • Prepare the Zucchini: Spiralize the zucchinis using a spiralizer or a vegetable peeler to create noodle-like strips. Set aside.
  • Sauté the Zucchini Noodles: In a large skillet, heat the olive oil over medium heat. Add the spiralized zucchini and sauté for 2-3 minutes until just tender but still crisp.
  • Add Pesto and Tomatoes: Stir in the pesto and cherry tomatoes. Cook for another 2 minutes until everything is heated through. Season with salt and pepper to taste.
  • Serve: Plate the zucchini noodles and garnish with fresh basil leaves and a sprinkle of Parmesan cheese if desired. Enjoy warm.
