- 4 medium zucchinis, spiralized into noodles
- 1 cup cherry tomatoes, halved
- 1/2 cup basil pesto (store-bought or homemade)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
- Parmesan cheese for serving (optional)
Prepare the Zucchini: Spiralize the zucchinis using a spiralizer or a vegetable peeler to create noodle-like strips. Set aside.
Sauté the Zucchini Noodles: In a large skillet, heat the olive oil over medium heat. Add the spiralized zucchini and sauté for 2-3 minutes until just tender but still crisp.
