French Lentil & Caramelized Onion Salad

Ingredients
  

  • 1 cup French green lentils , rinsed 200 g; du Puy or similar
  • 3 cups water or Golden Garden Vegetable Broth 720 mL
  • 2 tbsp olive oil 30 mL
  • 2 large onions, thinly sliced
  • 1 tbsp balsamic vinegar 15 mL
  • 1 tbsp honey or maple syrup 15 mL
  • 1 tsp fresh thyme leaves or ½ tsp dried
  • 2 tbsp red wine vinegar 30 mL
  • 2 tbsp extra-virgin olive oil 30 mL
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste
  • Optional: ½ cup crumbled goat cheese or chopped walnuts 60 g

Instructions
 

Cook the Lentils

  • Combine lentils and broth in a saucepan.
  • Bring to a boil, then reduce heat and simmer 20–25 minutes , until tender but not mushy.
  • Drain and set aside.

Caramelize the Onions

  • In a skillet, heat olive oil over medium-low.
  • Add onions and cook slowly, stirring occasionally, until golden and tender — about 25–30 minutes .
  • Stir in balsamic vinegar, honey, and thyme; cook 2 minutes more.

Assemble the Salad

  • In a bowl, whisk red wine vinegar, olive oil, Dijon, salt, and pepper.
  • Toss warm lentils with caramelized onions and dressing.
  • Add cheese or nuts if desired.
