- 4 large ripe tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- 1 French baguette, sliced
- 1 clove of garlic, halved (for rubbing on bread)
Prepare the Tomato Mixture: In a bowl, combine diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Mix well and let it sit for at least 15 minutes to allow the flavors to meld.
Toast the Bread: Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and drizzle with olive oil. Bake for about 5-7 minutes, or until the bread is golden and crispy.
Assemble: Once the bread is toasted, rub the cut side of a garlic clove on each slice for extra flavor. Top each slice with the tomato mixture, and serve immediately.
