Crispy Parmesan Zucchini Fritters with Garlic-Lemon Dip

Ingredients
  

For the Zucchini Fritters

  • 🔹 2 medium zucchinis, grated
  • 🔹 1/2 teaspoon salt
  • 🔹 1/2 cup grated Parmesan cheese
  • 🔹 1/4 cup all-purpose flour (or almond flour for gluten-free)
  • 🔹 1 large egg, beaten
  • 🔹 2 cloves garlic, minced
  • 🔹 1/2 teaspoon black pepper
  • 🔹 1/2 teaspoon smoked paprika (optional, for extra depth!)
  • 🔹 2 tablespoons chopped fresh parsley or basil
  • 🔹 2 tablespoons olive oil or avocado oil, for frying

For the Garlic-Lemon Dip

  • 🔹 1/2 cup Greek yogurt or sour cream
  • 🔹 1 tablespoon mayonnaise (for extra creaminess!)
  • 🔹 1 clove garlic, minced
  • 🔹 Zest of 1/2 lemon
  • 🔹 1 tablespoon fresh lemon juice
  • 🔹 Salt & pepper, to taste
  • 🧀 Want an extra crispy crust? Add 1/4 cup of panko breadcrumbs to the batter!

Instructions
 

  • ✔️ Grate the zucchini and sprinkle it with ½ teaspoon salt.✔️ Let sit for 10 minutes, then squeeze out excess moisture using a clean towel or cheesecloth. (Less moisture = crispier fritters!)
  • ✔️ In a large bowl, mix together the drained zucchini, Parmesan, flour, egg, garlic, black pepper, smoked paprika, and fresh herbs.✔️ Stir until well combined and a sticky batter forms.
  • ✔️ Heat olive oil in a large skillet over medium heat.✔️ Scoop about 2 tablespoons of batter per fritter and flatten slightly in the pan.✔️ Cook for 2-3 minutes per side, or until golden brown and crispy.
  • ✔️ In a small bowl, whisk together Greek yogurt, mayo, garlic, lemon zest, lemon juice, salt, and pepper.✔️ Taste and adjust seasoning as needed.
  • ✔️ Serve warm, garnished with extra Parmesan and fresh herbs, with the garlic-lemon dip on the side! 🍽️ Pair with a fresh salad, roasted veggies, or a side of marinara for dipping!
