Ingredients

  • 8 oz fettuccine or spaghetti
  • 2 Tbsp olive oil
  • 2 cups sliced mushrooms cremini or button
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish
  • Red pepper flakes, for heat optional

Instructions

  • In a large pot of boiling salted water, cook the pasta according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the mushrooms and sauté until browned and tender, 5-7 minutes. Stir in the garlic and cook 1 minute more, until fragrant.
  • Lower the heat and pour in the heavy cream, bringing it to a gentle simmer. Stir in the Parmesan until melted and creamy, then season with salt, pepper, and red pepper flakes if using.
  • Add the drained pasta to the skillet and toss until evenly coated in the sauce.
  • Serve hot, garnished with fresh parsley and extra Parmesan.
